TYPE OF CAKE BY CONTENT

Cake be distinguished by the content in it. One type contains fat, also known as shortening and the other foam (without fat). In some cases you find the third type that combines both shortening and foam usually called chiffon.

SHORTENED CAKE
Is a cake made from large amount of butter or other shortening like cream. Oil cakes are also included in this group.
These types usually contain leavening agents and are tender and moist.

UNSHORTENED OR FOAM CAKE
They usually contain no fat and are made from beaten white eggs which make them light and somehow airy. As the name suggest is in a foam-like form. Example is Angel food cake and sponge cake.
